Verve Cookies
Yields 12 cookies
These oatmeal-chocolate chip cookies are chock-full of powerful ingredients designed to bolster your verve — that vigor, energy, spirit, and enthusiasm we all so desperately crave right about now. We may be riding high on recent victories, but remember the arc to justice is said to be long. May these cookies fuel the next leg of your journey. And remember the key ingredient: to make them with LOVING KINDNESS.
1/2 cup whole wheat pastry flour
1/2 cup rolled oats
1 1/4 teaspoons baking powder
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup coconut oil
1/3 cup light brown sugar, firmly packed
2 teaspoons Ener-G Egg Replacer
3 tablespoons warm water
1 teaspoon vanilla extract
1/4 cup nondairy semisweet chocolate chips (heaping!)
1/4 cup shredded coconut
Take a moment to feel the love, and then get ready to bake. Preheat the oven to 350 degrees F. Lightly oil two baking sheets or line them with parchment paper.
Mix the flour, rolled oats, baking powder, cinnamon, and salt in a large bowl.
If the coconut oil has solidified, warm it in a small saucepan on the stove over low heat. Once the oil has liquefied, remove it from the heat.
Combine the egg replacer with the water in a small bowl and whisk together until frothy, about 3 minutes. Add the brown sugar, vanilla extract, and coconut oil and whisk until well combined.
Add the wet mixture to the dry mixture. Mix until just combined to make a dough. Fold in the chocolate chips and the optional shredded coconut.
Roll the dough into 12 balls, giving each one a little extra squeeze of your loving kindness before placing on the prepared baking sheets.
Bake 13 minutes. Let rest on the baking sheet for 2 minutes before transferring to a cooling rack. Cool for at least 10 minutes before eating and then let that be your showgirl fuel.
