Divine Decadence Scramble

I’m veganizing German scrambled eggs to achieve what Sally Bowles would certainly say is “divine decadence, darling…” Watch the video above to get a handle on what the hell your Mistress is talking about, and be entertained along the way – all inspired by the 1972 film Cabaret.
2 teaspoons vegetable oil or vegan buttery spread
2 tablespoons chopped vegan bacon
½ cup JUST Egg (shake the bottle before measuring)
1 tablespoon chopped fresh chives
Freshly ground black pepper
Heat the oil or vegan butter spread in a medium skillet over medium heat.
Add the vegan bacon and cook, stirring frequently until somewhat browned, about 3 minutes.
Combine the chives and the JUST egg in a measuring cup or small bowl.
Add the JUST Egg and chive mixture to the skillet and let the mixture cook, stirring occasionally, for about 5 minutes or until it solidifies and achieves the desired “scrambled egg” consistency.
Season to taste with freshly ground black pepper and serve warm. Sequins and fan kicks are all optional but very much encouraged.
Options for Vegan Bacon
For this recipe, I used the vegan Hickory Bacon from The Herbivorous Butcher. If you’re in the Twin Cities area, you might pick that up at their shop (currently offering the curbside pick-up option), or if you’re anywhere in the 50 states plus Puerto Rico, you can order online using their a la carte mail-order option. You might also check your local natural foods grocery store for another brand of vegan bacon and cook according package instructions.
