Radical Brownie Bundles
The recipe for Radical Brownie Bundles has arrived – and just in time for my 2021 Valentine’s show, Totally Ginger: A Retro 80s Bake-Along Sing-Along. (In case ya haven’t heard, on Saturday, February 13, 2021 at 7pm CT, I’m going live on Facebook to sing all your favorite 80s tunes while baking brownies. You are welcome to bake along and/or sing along.)
If you’d like to bake along during the show, here’s some IMPORTANT info for you: At showtime (7pm CT on Saturday, February 13, 2021) have all of your ingredients pre-measured, your muffin tin lightly oiled, your chocolate chips melted, and your oven preheated. I’m puttin’ on a show, and we’re not futzing around with any of that nonsense. It’ll be mix and bake and then back to the song and dance. Got it?
You might also like to prepare the brownies in advance so that you can sit back and nosh on them during the show. Or watch me make them during the show and then make for yourself a little later. Up to you!
As you consider when to make them, just know that I designed this recipe to be extra easy with readily available ingredients. It’s guaranteed deliciousness and a perfect recipe for the novice in the kitchen. ENJOY!
Radical Brownie Bundles
Yields 12 bundles
These fudgey brownies are baked in a muffin tin so you end up with twelve little bundles of chocolatey love. In the spirit of my upcoming 80s show, Totally Ginger, I am obliged to tell you they are like totally radical, dude. And that’s a good thing.
¾ cup plus two tablespoons nondairy semisweet chocolate chips
1 cup unsweetened applesauce
½ cup sugar
¼ cup vegetable oil
1 teaspoon vanilla extract
¾ cup whole wheat pastry flour
¼ cup walnuts (optional)
Get stoked and preheat the oven to 350 degrees F. Lightly oil a twelve-cup muffin tin.
Put 3/4 cup of the chocolate chips in a small saucepan over very low heat, stirring constantly until melted. Remove from the heat.
Put the melted chocolate, oil, sugar and vanilla extract in a medium bowl. Stir with a whisk until well combined.
Stir in the applesauce and mix until well combined.
Add the flour and stir to combine. Fold in the walnuts, if using. (The batter will be thick.)
Spoon the batter into the prepared muffin cups, filling each halfway. Smooth the top of each bundle slightly. (They don’t need to be perfectly flat; the bundles will even out while baking.)
Garnish each bundle with a pinch of the reserved chocolate chips.
Bake for 25 minutes, or until a toothpick inserted in the center of a bundle comes out clean. Then let these bitchin brownie bundles rest in the muffin tin for about 10 minutes before transferring to a cooling rack. Serve warm or at room temperature.
